Thanks again to you and John for including us in your housewarming party last night.  Since you were wondering what to do with that beautiful mango tree, mango salsa is one idea for when your delicious fruit ripens.

Mango salsa is the perfect summer time recipe. We have it most often as an appetizer with blue corn chips. Definitely try mango salsa on grilled meat dishes from burgers to fish.  You can even use it as a side dish – it’s pretty, colorful, healthy, and fresh.

Mango Salsa Recipe
Ingredients

2 ripe mangoes, peeled, pitted, and diced
1 red pepper, diced
Half a red onion, chopped
3 tablespoons fresh cilantro leaves, chopped
3 tablespoons fresh lime juice
1 teaspoon red pepper flakes
Dash of cayenne pepper
Salt and pepper to taste

Directions

1. Combine all the ingredients in a bowl.
2. Cover and allow to sit in the fridge for at least one hour.
3. Serve and enjoy!MangoDiced

I serve mango salsa with the red pepper jar right next to it for those who like to “kick it up a notch”.  Play around with the ingredients for the flavor you like to bring out  – fresh, fruity, tangy, sweet and sour…they all make mango salsa a great accompaniment. 

Hopefully it will be a good year and you’ll be swimming in fresh mango salsa.  Oh, and one more helpful tip.  I learned this the hard way after mangling my first attempt at mango salsa.
